How to make Mexican Quesadilla

Learn how to make Mexican quesadilla.

Mexican food is very famous for it's spicy and tangy taste. Here it's a homemade recipe for Mexican Quesadilla. But it's a with fusion  taste. It is rich with beans as well as cheese and paneer, to fulfill the requirement of vitamin, protein and calcium. Here in this recipe I have used tortillas with the recipe from pizza wrap. Even tortillas can be stored in freezer for 2 to 3 months if sealed in zip lock bag.
Preparation time - 25 minutes
Cooking time - 20 minutes
Serves - 4 person

Ingredients to make Mexican quesadilla:

4 big tortillas
1/2 cup baked beans
1/4 cup boiled kidney beans
1/4 cup soy beans
3 table spoons boiled sweet corns
1/2 cup small cubes of paneer
1/4 cup process cheese
1/4 cup mozzarella cheese
1 onion finely chopped
1 tomato finely chopped
2 to 3 green chilies finely chopped
Salt to taste
1 table spoon oil
1/4 cup chopped coriander leaves
2 tea spoon garlic paste

For assembling:

2 table spoon salsa sauce
Butter or oil for grilling or frying 
4 table spoon cheese

To serve with:


Tomato ketch up
Salsa sauce

Method to make Mexican Quesadilla:
  • Heat oil in a pan and add onion, garlic to it. Fry till onion turns light brown. 
  • Now add spices and boiled beans to it. Mix well and cook for 2 minutes.
  • Add coriander leaves, paneer and cheese to it. Mix well and remove from flame.
  • Let it cool at room temp.
Method to assemble Mexican Quesadilla:
  • Take a tortilla and spread salsa sauce over it. Now spread bean's stuffing over it and spread cheese. Cover with another tortilla. Press gently.
  • Repeat the process for remaining.
  • Shallow fry with oil or butter on non stick griddle - tavi. Or cut the quesadilla in 6 equal parts and grill them. Apply butter on both sides of them. 
  • Garnish with greens of spring onion. Hot and spicy Mexican quesadillas are ready to serve. Serve with tomato ketch up or salsa sauce.
