There are different types of spreads, so that you can serve different types of brischetta at a time.


Ingredients to make Bruschetta:


1 big french loaf
1/2 cup garlic butter

Ingredients to make Cheese Bruschetta:

1/2 cup cheese spread
1 to 2 tea spoon milk (opt)
2 table spoon finely chopped onion
1 table spoon finely chopped red capsicum
1 table spoon finely chopped yellow capsicum
2 table spoon finely chopped green capsicum
2 table spoon finely chopped cabbage
2 table spoon finely chopped tomatoes 
1 tea spoon chopped olives (black or green)
Salt to taste (opt)
1 tea spoon finely chopped green chilies
1 tea spoon oregano
1/2 tea spoon chilly flacks
1/2 tea spoon black pepper powder 


Ingredients to make Corn Pineapple Bruschetta:


1/2 cup cheese spread
1/4 cup boiled sweet corn
1/4 cup tinned pineapple - finely chopped

1 tea spoon chopped olives (black or green)
Salt to taste (opt)
1/2 tea spoon black pepper powder 
1 tea spoon oregano
1/2 tea spoon chilly flacks

Method to make Bruschetta:

  • Cut french loaf on similar pieces. Apply garlic butter on both the sides of bread and grill it for 3 - 4 minutes in a grill toaster or OTG. 
  • Keep a side.
Method to make Cheese Bruschetta:
  • Mix all the ingredients of cheese bruschetta in a bowl and spread it over grilled bread. Grill for 3 - 4 minutes. Sweet and spicy Corn Pineapple Bruschetta is ready to serve.

Method to make Corn Pineapple Bruschetta:

  • Mix all the  ingredients of Corn Pineapple bruschetta in a bowl and spread it over grilled bread. Grill for 3 - 4 minutes. Hot and yummy Bruschetta is ready to serve.
Tips:
  • You can spread extra grated cheese for more cheese effect.  
  • Add milk if the spread is very heard other wise avoid it.
  • If tinned pineapple is not available mix 2 table spoon sugar in pineapple pieces and cook for 5 minutes. 
  • Always mix ingredients of spread at the time of cooking only.

How to make Palak Paneer Paratha

Recipe by Naiya Sheth : Learn how to make Palak Paneer Paratha. As we all know parathas are well known break fast option for Indians. Here in this recipe it's a very healthy and stomach feeler version of  traditional paratha. Palak Paneer Paratha contains spinach and cottage cheese along with cheese, butter, wheat flour and soya good ness also. Means a healthy break fast with the goodness of iron, calcium and vitamins also. 


Preparation time - 15 minutes
Cooking time - 10 minutes
Serves - 4 person


Ingredients to make Palak Paneer Paratha: 


For outer layer - dough:


2 cups wheat flour
2tea spoon soybean flour
2 table spoon curd
1 cup chopped spinach
          or
1/2 cup spinach pure
2 table spoon oil
Salt to taste
Butter to shallow fry 


For feeling:


2 cups crumbled paneer
1 cup finely chopped onion
Salt to taste
4 - 5 green chilly finely chopped
1/2 cup coriander finely chopped
2 tab.e spoon grated cheese ( opt.)


Method to make Palak Paneer Paratha:


For outer layer:

  • Mix all the ingredients of outer layer and make soft dough for paratha.
  • If you are using spinach pure add water as required, and if chopped spinach is used make it with plane water. Knit properly and keep a side.
For feeling:
  • Mix all the ingredients very lightly, keep a side.
Preparation of Palak Paneer Paratha:
  • Roll 2 small equal size paratha from dough. Spread feeling over one and cover it with another. Use water to seal parathas.
  • Repeat the same process for rest.
  • Shallow fry paratha on a non stick griddle - tava at medium flame with butter.
  • Hot and healthy Palak Paneer Paratha is ready to serve. Serve it with plane curd.
Tips:
  • If you are using 1 kg. of wheat flour it will be ideal to mix 100 gm. soybean flour in it.
  • For making spinach gravy take raw chopped spinach instead of blanched palakh it will be more healthy.

How to make Bread Rolls

Recipe by Naiya Sheth : Learn how to make Bread Rolls with chinese test. Normally bread rolls are made from bread and boiled potatoes. Here is a little change, in this recipe stuffing is made from noodles and vegetables means. It will become Chinese taste bread rolls. A very easy and tasty recipe.

Preparation time - 10 minutes

Cooking time - 15 minutes
Serves - 4 persons

Ingredients to make Bread Rolls:


For outer layer:


8 slices of bread 
1/2 cup milk or water
1 cup medium thick slurry of refined flour and corn flour
2 cups fresh bread crumbs
Oil for deep frying


For Stuffing:


1/2 packet of Hakka noodles 
1 big capsicum - finely chopped
1 big onion - finely chopped
1 carrot - finely chopped
1 cup cabbage - finely chopped
1 tea spoon ginger paste
1 tea spoon garlic paste
1/2 table spoon soy sauce
1 tea spoon red chilly sauce
Salt to taste
4 -5 green chilies - finely chopped
1 pinch aaji no motto
2 table spoon oil


To serve with:


Tomato sauce

Method to make Bread Rolls:

For stuffing:
  • Boil crushed noodles in boiling water after adding salt and 1/2 tea spoon oil in water. Strain and keep a side.
  • Take oil in a pan, add ginger garlic paste in it, add onion and fry for a minute. Now add all vegetables and aaji no motto and fry for 2 minutes at fast flame.
  • Add boiled noodles and chilies, stir well. Add sauces and mix well.
  • Let it cool at room temperature.
  • Make medium size balls from it.

For making Bread Rolls:

  • Soak bread in milk for a second. Take it in a palm and put a noodles ball in it and make a ball from it. Dip it in flour slurry and roll in bread crumbs keep a side. Repeat the same process.
  • Repeat the process for rest.
  • Deep fry all Bread Rolls in hot oil at high flame. Serve with tomato sauce.
Tips:
  • You can use boiled potatoes instead of bread. In case you are using potatoes Add 1 - 2 table spoon corn flour.
  • Soak noodles for 10 minutes before boiling, to make process fast.

  • Heat oil in a non stick pan. Add mung dal flour and mung dal in it. Roast at slow flame till light brown.
  • Add 3 cups of boiling water in it and let it cook till mung dal absorbs water. Stir continually.
  • Add sugar and remaining water and saffron into it and cook well.
  • Cook till it separates ghee. Add cardamom powder.
  • Hot and yummy Mung Dal Halwa is ready to serve.
  • Garnish with almond, pista and cashews.

Preparation time � 10 minutes
Cooking time 20 -25 minutes
Serves � 4 people


Ingredients to make Dry Idli Manchurian:

20 � 25 mini idlies � (can take veg. idli also)
Left over cold idli is more preferable
1 cup medium thick slurry of refined flour and corn flour
2 tea spoon soy sauce
1 tea spoon ginger � garlic paste
Oil for deep frying

Ingredients to coat idlies:

For coating:

1 � - table spoon oil
3 to 4 green chilies
2 table spoon corn flour
2 table spoon Soya sauce
A pinch aaji no motto
� cup water

For garnishing:

Finely chopped coriander leaves
Finely chopped greens of spring onion

Idlis & Dosas (Total Health Series)Method to make Dry Idli Manchurian:

  • Add soy sauce and ginger � garlic paste and salt to medium thick slurry of corn flour and refined flour.
  • Coat idlies with slurry. If you don�t have mini idlies cut them in small pieces.
  • Heat oil in a frying pan and fry coated idlies in it at high flame.
  • Drain them in an absorbent paper. Keep a side.
For coating:
  • In another pan, heat 1 table spoon oil and fry onion and green chilly at fast flame. Add aaji no motto and garlic at same flame.
  • Now mix Soya sauce and corn flour in � cup water. Mix well.
  • Add Soya sauce mixture in pan at low flame. Cook till thick.
  • Add fried idlies in it and cook for 2 minutes only.
  • Transfer Dry Idli Manchurian in a serving plate and garnish with coriander leaves and spring onion.
  • Serve hot.

How to make Kathi rolls

Recipe by Naiya Sheth : Learn how to make Kathi Rolls. Whole wheat flour chapatti is a very good source of iron and fiber. It is boring to have chapatti everyday. So, here it�s a healthy recipe from chapatti. Kathi Roll is stuffed by paneer and vegetables. Which means it is full of vitamins, minerals and calcium also.



Preparation time � 15 to 20  minutes
Cooking time � 15 minutes
Serves � 4


Ingredients to make Kathi Rolls:


For Paneer filling:


1 cup paneer � cubed
� cup tomatoes diced
� cup capsicum � diced (may be red, green and yellow)
� cup onion diced
1� tea spoon oil or butter
2 table spoon long cut spring onion greens


For marinating:


� cup whipped curd
� tea spoon turmeric powder
� tea spoon ginger paste
� tea spoon garlic paste
� tea spoon gram flour
� tea spoon chaat masala
� tea spoon roughly kasuri methi
� tea spoon garam masala
Salt to taste


For chapatti:


1 cup whole wheat flour
1 tea spoon soybean flour
1 cup or as required milk
1 tea spoon baking powder
Salt to taste


To serve with:


Tomato sauce


Method to make Kathi Rolls:


For stuffing:
  • Mix all the ingredients of marination and add paneer, tomatoes, capsicum and onion to it. Mix carefully. Keep a side for 10 minutes.
  • Heat oil or butter in a non- stick pan and add capsicum, onion and cook for 2 minutes.
  • Now add tomato, paneer and again cook for 5 minutes at high flame. String occasionally.

For chapatti:
  • Mix all the ingredients of chapatti and knead soft dough. Keep a side for 10 minutes.
  • Knead again and cook chapattis lightly on a tava - griddle on both the side. Keep a side covered with slightly wet muslin cloth.
Process to make Kathi Rolls:
  • Divide the paneer tikka filling in to equal parts same as chapattis.
  • Spread a portion of filling in the centre of chapatti and roll up tightly.
  • Repeat the same for the rest.
  • When you want to serve, cook the rolls on hot tava or griller. Apply some butter if you wish.
  • Hot and tempting Kathi Rolls are ready to serve.
  • Serve them with tomato sauce after cutting into desired size.
Tip:
  • You can do this whole process in griller also. Spread some butter over griller tray and place ready kathi roll over it for hot and crispy effect. Grill for 5 minutes.

  1. Roughly crush chocolate cookies and mix them with both ice creams,milk, cocoa powder and vanilla essence.
  2. Now whip them.
  3. Garnish with chocolate sauce.
  4. Serve chilled Chocolate smoothie.
  5. You can serve this with a scoop of vanilla ice cream also.
Ingredients to make Chocolate Sauce:

1/2 cup milk
50 gram grated dark chocolate

Method to make Chocolate sauce:
  • Mix both ingredients in a microwave safe bowl and cook in microwave till chocolate melts properly.

Ingredients to make Tomato Upma:


2 cup sooji - semolina
1 cup tomato pulp
4 table spoon oil
1 tea spoon mustard seeds
1 tea spoon urad dal
2 tea spoon cashew pieces
2 onions finely chopped
1 tomato finely chopped
1/4 cup boiled green peas
3 cup water
Salt to taste
1 1/2 tale spoon crushed green chilies
1 tea spoon crushed ginger
10 - 12 curry leaves


For garnishing:


Finely chopped coriander


To Serve with:


Coconut chutney

  • Take oil in a pan, add mustard seed in it. When it crackles add curry leaves, cashew pieces and urad dal. Now add chilly and ginger. Cook for 1/2 minute. 
  • Now add onion and stir fry till transparent. Add green peas and semolina in it. Roast till light brown. When semolina is roasted properly add tomato pieces, tomato pulp and water. Cook properly.
  • When semolina is cooked add salt to taste.
  • Hot and healthy Tomato Upma is ready to serve. 
  • Garnish it with coriander leaves and serve with coconut chutney.

Ingredients to make coconut chutney:

1 grated coconut without brown portion
1/2 cup roasted dadiya chana
1 cup curd
2 green chilies
1 tea spoon crushed ginger
8 - 10 curry leaves
Salt to taste

For Tadka:

1 table spoon oil
1/2 tea spoon mustard seeds
1/4 tea spoon hing
5 - 6 curry leaves


Method to make Coconut chutney:
  1. Crush all the ingredients of chutney together.
  2. Heat oil in an another small pan, add mustard seeds and let it crackle. Add hing and curry leaves in it and spread over chutney.

  • First of all fry noodles in hot oil. Drain and place it on a absorbent paper.
  • Melt dark chocolate in double boiler or microwave oven.
  • Crush noodles roughly by hands, and mix them with melted chocolate. Also mix chocolate chips and roasted almonds. Mix properly. 
  • Make balls from it with the help of fork and spoon on butter paper.
  • Place gems or silver balls over it and refrigerate for at least 20 minutes.  
  • Crispy Chocolate Noodles are ready to serve. They will look like spider or bird nest.

Preparation time � 10 � 15 minutes

Ingredients to make Tandoori paneer wraps:


8 half cooked roties 
250 gram dies cut paneer


For spread:


6 to 7 table spoon mayonnaise 
2 table spoon curd
Salt to taste
1 tea spoon powder sugar 


For marination:


2 table spoon garlic chutney
� tea spoon garam masalo
Salt to taste
4 table spoon curd
2 table spoon roasted gram flour
Oil or butter to shallow frying


Salad:


� cup Grated cabbage
� cup Grated carrot
� cup Long sliced tomatoes
� cup Long sliced capsicum
� cup grated onion
Salt to taste
1 tea spoon black pepper powder


Rajah Tandoori Masala (Spice Mix) 100gMethod to make Tandoori Paneer Wraps:


For Spread:


Mix mayonnaise, curd, salt and powder sugar, keep a side.


For Marination:


Mix garlic chutney, garam masalo, salt, curd and roasted gram flour to gather. Add paneer pieces in it. Marinate paneer for 10 minutes. Put paneer in griller for 2 minutes. 
Mix salad, salt and black pepper powder, keep a side.
Take a half cook roti spread above mixture over it. Spread salad over it. Spread paneer pieces over it.
Fold roti and shallow fry with butter or oil.
Repeat process for other.
Serve hot Tandoori Paneer Wraps with tomato ketch up.

How to make Paneer Pakora

Here it's a home made recipe for paneer pakora. It is an ideal choice for starter. And great snack in these rainy days. Originally this is a mild taste recipe but if you want to have spicy you may use garlic chutney instead of kothmir fudina chutney.


Preparation time - 15 - 20 minutes
Cooking time - 10 - 15 minutes
Serves - 4 person


Ingredients to make Paneer Pakora:


400 gram paneer - cottage cheese
1/2 to 3/4 cup kothmir fudina ni chutney
1 tea spoon red chilly powder
Salt to taste
2 cup gram flour - besan
1 tea spoon ajwain - carom seeds
A pinch soda bicarb - opt.
2 table spoon rice flour or corn flour
1 table spoon lemon juice
Oil to deep fry



MTR Kadhi Pakora, Ready-To-Eat, 10.56-Ounce Boxes (Pack of 5)Method to make Paneer Pakora:
  • Slit each paneer cube without cutting through. Apply green chutney or garlic chutney in the slit. Keep a side.
  • Mix 1.2 tea spoon of red chilly powder and salt in a plate and marinate paneer pieces in it. 
  • Mix gram flour with salt, rice flour, carom seeds, red chilly powder and lemon juice.
  • Add sufficient water and make thick and smooth batter. Keep a side for 10 - 15 minutes. 
  • Deep paneer pieces in batter and deep fry in hot oil at medium flame.
  • Drain and place on a absorbent paper.
  • Sprinkle chaat masala on hot pakora.
  • Hot and spicy Paneer pakoras are ready to serve.
  • Serve them with tomato sauce.
Ingredients to make Green chutney:

1 cup chopped coriander 
1/2 cup chopped mint leaves
5 -6 green chilies
2 tea spoon chopped ginger
1 tea spoon roasted cumin powder
1 table spoon curd
            or
1 tea spoon lemon juice
Salt to taste
1 table spoon roasted peanut - crushed

Method to make Green Chutney:
  • Crush all the ingredients of chutney by adding sufficient water. 
Ingredients to make Garlic Chutney:

10 - 12 cloves garlic 
3 - 4 table spoon red chilly powder
1 table spoon sesame seeds
Salt to taste

Method to Make Garlic Chutney:
  • Mix all the ingredients if garlic chutney and crush in blender after adding some water.
  • Try to add least water, and add more when needed.

How to Make Sesame Toast

This recipe contains vegetables and bread. So it will give filling effect. Sesame Toast is very quick and easy to make. It is known as vegetable pastry also.

Ingredients to make Sesame Toast:


4 slices bread
200 gram boiled potato - mashed
1 onion - finely chopped
1 carrot - finely chopped
1 capsicum finely chopped
Salt to taste
4 - 5 green chilies - crushed
1 tea spoon crushed ginger
1/4 tea spoon soy sauce
1/2 tea spoon red chilly sauce
1/4 cup finely chopped coriander leaves
1 table spoon corn flour
4 - 5 table spoon self rising flour paste - thick
5 - 6 table spoon sesame seeds
Oil to deep fry


To serve with:


Tomato sauce
Khajur imli ni chutney


Paskesz Melba Toast, Melba Toast Sesame, 7-Ounce Package (Pack of 7)Method to make Sesame Toast:
  • Cut sides of all the breads, keep a side.
  • Mix all the ingredients of toast avoiding sesame seeds, flour paste and oil.
  • Take a slice of bread and spread above mixture over it. Cover the mixture with flour paste properly. And now cover it with sesame seeds.
  • Deep fry toast in hot oil. Fry it in up side down position so that it don't absorb more oil.
  • Turn it and fry for a second only. Drain and place on an absorbent paper.

How to Make Wonton

Recipe by Naiya Sheth : Learn how to make wonton - a very well known Chinese recipe. Here is a home made recipe of Wonton, which is loved by everybody. It contains sprouted beans and vegetables also, so good for health. And of course very good in taste. It is known as Chinese samosa also.

Preparation time - 15 minutes

Cooking time - 10 minutes
Serves - 4 person


Ingredients to make Wonton:


For stiffing:


1/2 packet spaghetti
250 gram cabbage - finely chopped
100 gram carrot - finely chopped
4 - 5 green chilies
1 tea spoon crushed ginger
1 onion - finely chopped
50 gram sprouted mung
4 - 5 cloves crushed garlic
100 gram chopped coriander
1 table spoon soy sauce
Salt to taste
A pinch aaji no motto (opt.)


For outer layer:


400 gram self rising flour
2 table spoon corn flour
1 tea spoon lemon juice
2 table spoon oil
Salt to taste
Oil for deep frying


To serve with: 


Chilly tomato sauce

Method to make Wonton:


For outer layer:
  • Mix all the ingredients of outer layer and make stiff dough from it with the help of water. Cover with wet thin cloth and keep a side.
For stuffing:
  • Cut spaghetti in small pieces and boil them in salted water.
  • Heat oil in a pan, add garlic, chilly and ginger paste in it and fry for a moment. Now add onion, carrot, capsicum, cabbage and mung. Sprinkle aaji no motto and salt over it cook for 2 minutes at high flame. Add soy sauce and spaghetti. Mix well.
  • Let it cool at room temperature.

For making Wonton:

  • Make small balls from dough and roll puris from them, now stuff stuffing material in it and give them wonton shape. Deep fry them in hot oil at medium flame.
  • Serve hot wonton with chilly tomato sauce.
