How to make Paneer Butter Masala


Learn how to make Paneer Butter Masala. Another paneer recipe from Indian cuisine. Paneer Butter Masala is very famous and medium spicy vegetable recipe.


Preparation time - 5 minutes
Cooking time - 10 minutes
Serves - 4 persons


Ingredients to make Paneer Butter Masala:



200 gram paneer cubes
2 big onions
4 to 5 big tomatoes
1 table spoon ginger paste
1 table spoon garlic paste
2 table spoon cashew paste
1 table spoon kasuri methi
1 1/2 to 2 tea spoon garam masala powder
1 tea spoon red chilly powder
Salt to taste
4 table spoon butter
70 ml. fresh cream


Method to make Paneer Butter Masala:
  • Blanch tomatoes and de-skin them, now make smooth pure from it.
  • Chop 1 onion and boil the other one. Make a paste from the boiled one.
  • Cut paneer into rectangles or squares.
  • Heat 3 table spoon butter in a pan, add chopped onions and saute till brown.
  • Now add onion paste,ginger - garlic paste and again saute for 2 to 3 minutes. Add cashew paste and garam masala and mix well.
  • Add tomato pure,roughly crushed kasuri methi and salt to taste. stir well.
  • Add paneer and simmer for 3 minutes.
  • Remove from flame and add remaining butter.
  • Garnish with chopped coriander.
  • Hot and tempting Paneer Butter Masala is ready to serve.

How to make Malai Kofta

Preparation time - 15 minutes
Cooking time - 20 minutes
Serves - 4 persons



Ingredients to make Malai Kofta:


Outer layer of kofta:


2 big potatoes - boiled and mashes
2 to 3 table spoon cornflour
Salt to taste
Oil for frying


For Stuffing of Kofta:

125 gram grated Paneer(cottage cheese)
50 gram unsweetened mawa(khoya)
1 table spoon cashew nuts pieces
10-12 raisins
1 tea spoon Black Pepper Powder
Salt and Sugar as per taste

For grinding:

2 big onions - boiled and crushed
10-15 soaked cashew nuts

2 table spoon poppy seeds(khuskhus)
1/2 tea spoon  sesame seeds in 1/2 cup milk for 15 minutes.
2-3 green chillies
5-6 Garlic cloves
1 tea spoon grated ginger
2 table spoon curd

For gravy:

2 table spoon ghee
1 inch piece cinnamon
2-3 cloves
3-4 green cardamom
3 table spoon thick cream
Salt and sugar as per taste

For garnishing
Fresh cream
Chopped coriander


Method to make Malai Kofta:
  • For kofta:
  • Grate the boil potatoes, add 1 table spoon cornflour and mix it well, if the mixture is wet add more cornflour to it. Make a smooth mixture.
  • Mix well all ingredients for stuffing. Divide the mixture into 5-6 portions. Take each portion on the palm of your hand, flatten it to make a disc shape and place on it some stuffing mixture and make kofta. Roll them in remaining cornflour and fry them in oil till they are light brown in color.
  • Drain koftas in absorbent kitchen tissue.
  • For gravy:
  • Grind all the grinding ingredients to a fine paste.
  • For making gravy heat 2 tbsp Ghee in a pan, add cloves and green cardamom add grounded paste to it and fry for some time when the paste starts leaving oil add sugar, salt, cream and add 1/2 a cup of water, make gravy let the gravy simmer for 5-8 minutes.
  • Place the fried koftas in a serving bowl and just before serving pour hot gravy over these. Garnish it with some some fresh cream and chopped coriander leaves.
  • Hot and delicious Malai Kofta is ready to serve.
  • You may serve it with roti, naan, kukcha or parathas.

    How to make Palak Paneer

    Serves - 4 person




    Ingredients to make Palak Paneer:


    250 gram paneer 
    1 cup palak pure
    1 cup tomato pure
    1/2 cup finely chopped onion 
    1/2 tea spoon crushed garlic
    1/2 tea spoon crushed ginger
    2 tea spoon crushed green chilly
    1 tea spoon cumin seeds
    1 tea spoon garam masalo
    2 tea spoon oil
    Salt to taste


    For garnishing:


    Paneer 
      or 
    Fresh cream


    Method to make Palak Paneer:
    • In a microwave proof bowl mix oil, cumin seeds, onion, green chilly, garlic and ginger. Cook for 3 - 4 minutes at MICRO HI. stir well.
    • Add palak pure and again cook for 2 minutes at MICRO HI. Mix well.
    • Now add tomato pure, paneer and other spices and cook for 2 minutes at MICRO HI.
    • Garnish with paneer or fresh cream. Hot and delicious Palak Paneer is ready to serve. 
    • Serve it with roti, naan, paratha or kulcha.
    Tips:
    • Cooking time may be differ by make of microwave.
    • For blanching palak in microwave add sufficient water in a big bowl of palak and cook for 2 minutes at MICRO HI.

    Preparation time - 10 minutes

    Serves - 4 persons



    Ingredients to make Paneer Bhurji:


    1 1/2 table spoon oil
    1 tea spoon cumin seeds
    1/2 tea spoon crushed ginger
    1/2 tea spoon crushed garlic
    1 onion finely chopped
    300 gram paneer
    2 blanched tomatoes finely chopped 
    1 tea spoon chopped green chilly
    1/2 tea spoon turmeric powder
    1 tea spoon red chilly powder
    Salt to taste
    2 table spoon finely chopped green capsicum


    For garnishing:


    1 table spoon cream cream
    2 table spoon chopped coriander leaves


    Method to make Paneer Bhurji:
    • In a big microwave proof bowl mix oil, onion, ginger - garlic paste and cook for 3 minutes at MICRO HI.
    • After that add all remaining ingredients to it and cook for 2 minutes at MICRO HI.
    • Garnish with cream and coriander.
    • Hot and delicious Paneer Bhurji is ready to serve.
    Tips:
    • You can make same recipe on flame also. For that you have to do same process on flame. But stir continually.
    • For blanching process of tomatoes in microwave refer microwave cooking tips .

    How to make Paratha

    Recipe by Naiya Sheth : Learn how to make Paratha. The home made recipe of paratha is very quick and can be eaten with any curry or vegetable. You can say lachchha paratha to this recipe. 


    Preparation time - 10 minutes
    Cooking time - 30 minutes
    Makes 15 parathas


    Ingredients to make Paratha:


    2 1/2 cup whole wheat flour
    1/8 cup soy flour
    2 table spoon oil
    Salt to taste
    2 to 3 table spoon Mixture 
    of semi melted ghee and rice flour
    Butter or ghee to apply on paratha


    Method to make Paratha:
    • Mix wheat flour, salt and oil in a big mixing bowl. Make semi soft dough with the help of water. Knead properly for 4 to 5 minutes.
    • Divide dough in equal 15 portion. Roll round paratha from it and spread ghee mixture over it. Fold it in zig zag pattern and make round from it. Repeat the process for the rest.
    • Roll the parathe and cook it on tava - griddle from both the side at medium flame.
    • When light brown crispy paratha is ready remove from flame and apply ghee or butter over it.
    • Repeat the same process for rest.
    • Serve hot with curry or vegetable.
    Tips:
    • You can make triangle paratha by folding them twice.
    • Half of wheat flour and refined flour can be taken.

    How to make Kulcha

    Recipe by Naiya Sheth : Learn how to make Kulcha. Here it's a another bread verity we can serve with vegetables or curry.  Here it's a home made verity for soft and healthy Kulcha.


    Preparation time - 2 minutes
    Cooking time - 20 minutes
    Makes 5 to 6 Kulchas


    Ingredients to make Kulcha:


    1/2 tea spoon dry yeast
    1/4 tea spoon sugar
    1/2 cup wheat flour
    1/4 cup soybean flour  
    Salt to taste

    1/4 cup finely chopped mint leaves
    Rice flour for dusting
    Butter


    Method to make Kucha:
    • Dissolve yeast and sugar in 2 to 3 table spoon lukewarm water and keep a  side for 10 minutes.
    • Mix both flours, mint leaves and salt in another bowl.
    • After 10 minutes add the yeast mixture to flour mixture and make soft dough from it. Use normal water as required. Make soft and smooth dough by kneading for 5 to 6 minutes.
    • Cover it with wet muslin cloth and leave aside for 15 to 20 minutes.
    • Press the dough tightly and remove the air.
    • Divide the dough in equal portions and roll kulcha with the help of dry rice flour.
    • Cook it on the tava - griddle at medium flame by using butter on both the sides, till both sides are golden brown. Kulcha should puff like phulkas.
    • Repeat the process for remaining.
    • Serve hot kulcha with vegetable or curry.

    How to make Naan

    Recipe by Naiya Sheth : Learn how to make Naan. In Indian recipes rotti is very important. Here it's a recipe for traditional Butter Naan. You can make this recipe on tava - griddle or in tandoor also.


    Preparation time - 5 minutes
    Cooking time - 10 minutes
    Serves - 4 person


    Ingredients to make Naan:


    750 gram refined flour
    Salt to taste
    2 - 3 table spoon curd
    100 gram butter
             or
    100 ml oil
    1/4 tea spoon baking soda
             or
    1/4 tea spoon soda bi carb
    1 table spoon black sesame seeds


    Method to make Naan:
    • Mix refined flour, salt, curd, soda and oil in a bowl and Kneed a soft dough from it.
    • Apply little ghee or butter and kneed again. Cover with wet muslin cloth and keep a side for 1/2 an hour. If possible give rest for 2 to 3 hours.
    • Divide the dough into equal portion and roll them. Spread black sesame seeds on upper surface.
    • Heat tava - griddle and cook like pulkas.
    • Apply butter on the upper surface of the naan.
    • Repeat the process for the rest.
    • Serve hot Naan immediately with vegetable. 
    Tips:
    • You can kneed dough with milk also.
    • For making naan in tandoor apply little water on the lower side of naan and stick it to tandoor's wall.
