Serves - 4 people


Ingredients to make Brownie Milk Shake:


1 recipe brownie
8 scoops vanilla ice cream
4 cup milk 
2 tea spoon sugar (opt.)


For garnishing:


Whipped cream
Grated chocolate 
Chocolate chips


Method to make Brownie Milk Shake:

  • First of all crumble 4 big pieces of brownie by hands and mix it with 4 scoops vanilla ice cream and milk.
  • Add sugar if needed. Blend it properly. 
To proceed:
  • In a tall shake glass add some small pieces of brownie and than cover it with a scoop of vanilla ice cream, here you can take chocolate ice cream also. 
  • Pour milk shake over it and garnish with whipped cream and chocolate chips.
  • Repeat the process for remaining.
  • Make this preparation at the time of serving only.
  • Cool and creamy Brownie Milk Shake is ready to serve.
Tips:
  • You can use refined flour brownie also. 
  • Instead of skimmed milk full fat milk can be taken for rich and creamy texture.
  • Whipped cream can be avoided.

How to make Khajur - Date's Rolls

As we all know khajur � dates are very good source of hemoglobin. So for date�s lovers it�s a homemade recipe called khajur rolls. Even kids will love to have it.

Ingredients to make Khajur Rolls:

1 tin � 400 grams condensed milk
1 kilo seedless khajur � dates
75 grams chopped almonds
75 grams chopped pistachio
75 grams chopped cashew nuts

For rolling:

Desiccated coconut

Method to make Khajur rolls:

  • Chop dates roughly.
  • Mix all the ingredients in a non stick pan and cook at slow flame.
  • Stir continually.
  • It will not take long time to cook.
  • Stir till a soft lump forms.
  • Let the mixture come at room temperature.
  • Spread desiccated coconut on a butter paper or plastic sheet. Grease hands and make thick roll from mixture and roll it above coconut. You may make small balls also.
  • Let it chill in refrigerator.
  • Rich and tasty Khajur - Dates Rolls are ready to serve.

How to Make Pizza Puff

Recipe by Naiya Sheth : Learn how to make Pizza Puff. As we all know pizzas are loved by everyone. So here it's a home made and crispy version of delicious and mouth watering pizza. Pizza puff is a healthier version because it contains pizza sauce as well as vegetables and cottage cheese also.
Preparation time - 20 minutes

Cooking time - 20 to 30 minutes
serves - 2 people


Ingredients to make Pizza Puff:


For outer layer:


200 grams refined flour
80 grams butter

1/2 tea spoon chili flacks
1/2 tea spoon oregano
salt to taste
chilled water for kneading dough


For stuffing:


5 table spoon pizza sauce
100 grams paneer
1 onion - medium chopped
1/2 capsicum - medium chopped
Salt to taste
1 tea spoon black pepper powder
1/2 tea spoon oil
1 cup grated process cheese
1/2 cup pizza cheese


Method to make Pizza Puff:


For making dough:
  • Mix all ingredients of dough in a big bowl and knead hard dough with the help of chilled water. Knead properly and keep in refrigerator for 10 minutes covered.
For stuffing:
  • Cut paneer, onion and capsicum. Marinate them in salt, black pepper powder and oil for 10 minutes.
  • Cook them in non stick pan till light brown at slow flame.
To proceed:
  • Make medium size balls from dough. (5 balls.)
  • Roll medium thick and spread pizza sauce over half portion, spread paneer, onion and capsicum over it.
  • Spread pizza cheese and process cheese over it.
  • Sprinkle chili flacks and oregano over it.
  • Overlap the stuffing and seal properly with the help of fork.
  • Spread butter lightly over the puff. 
  • Repeat the process for the rest.
  • Bake them on preheated oven at 200`c temp for 20 to 30 minutes or till golden brown in color.
  • When baked remove from oven and sprinkle chili flacks and oregano.
  • Hot and tempting Pizza Puff is ready to serve. Serve it with soft drink.

How to Make Halwasan

Enjoy the home made and easy recipe for halwason. It is a very famous Indian sweet from Khambhat- Gujarat. It is made from fresh cottage cheese so, a very good source of calcium.

Preparation time - 5 minutes
Cooking time � 20 minutes
Makes 15 to 16 pieces (approx.)

Ingredients to make Halwasan:

1 liter milk
2 table spoons semolina
     or
coarse wheat flour
2 table spoon edible gum
2 table spoon ghee
2 table spoon sour curd 
1 cup sugar
1 tea spoon cardamom powder
� tea spoon nutmeg powder � jaifal
� tea spoon saffron strands

For garnishing:

Sliced almonds
sliced pistachio
Cardamom seeds

Method to make Halwasan:

  • In a big flat non stick pan heat 1� table spoon ghee, add semolina and cook till it turns pink. Add edible gum and roast for 2 to 3 minutes. Keep aside.
  • In another pan add remaining ghee and add sugar, fry till sugar caramelizes. Keep aside.
  • In another deep pan heat milk to boil, add sour curd to it and allow it to curdle.
  • Mix caramelized sugar and milk mixture to the first pan. Stir continually.
  • Let it thick. Add nutmeg powder and cardamom powder and saffron to it. Mix well.
  • Let it come at room temperature. Make small balls from the mixture and garnish with sliced almond, pistachio and cardamom seeds.
  • Halwasan is ready but it will be advisable to serve it after 24 hours.

preparation time - 15 minutes
Cooking time - 10 minutes


Ingredients to make Raj Kachori:


For outer layer:


1 cup Refined flour
1 table spoon semolina
Salt to taste
1/2 tea spoon lemon juice
3 table spoon oil
Oil for frying 


Ingredients to serve Raj Kachori:


1/4 cup sweet chutney - Imli ni chutney
1/4 cup green chutney - coriander chutney
1/4 cup whipped curd
1/4 cup par boiled sprouts (mung, cheek beans etc.)
1/2 cup boiled and mashed potatoes
1/4 tea spoon red chilly powder
1/4 tea spoon roasted cumin powder
2 tea spoon garlic chutney
1 finely chopped onion


For garnishing:


Nylon sev
Pomegranate  
Grated beat root
chopped coriander leaves


Method to make Raj Kachori:


For outer layer:
  • First of all mix all the ingredients of outer layer and make semi soft dough from it. Knead properly and keep aside for 10 minutes.
  • make balls from dough and roll puri from it. 
  • Heat oil and fry puri at medium to slow flame. When light brown remove from oil and drain on transparent kitchen tissue.
  • Keep a side.
To proceed:
  • Break kachori from the middle and spread mashed potato over it. Spread sprouts over it. Now pour sweet chutney, green chutney, garlic chutney and whipped curd over it.
  • Sprinkle sev, coriander leaves and grated beat and onion over it. 
  • At the end sprinkle red chilly powder and chaat masala over it.
  • Very tasty and easy Raj Kachori is ready to serve.
  • Repeat the same process for remaining.
Ingredients to make Khajur Imli ki Chutney:


250 gram dates - Khajur
100 gram tamarind - Imli
100 gram jaggery - gud
2 tomatoes 
Salt to taste
2 table spoon red chilly powder
1 tea spoon roasted cumin powder


Method to make Khajur Imli ki Chutney:
  • Soak dates and turmarind in luke warm water for 1 hour.
  • Boil tomatoes.
  • Mix all the ingredients and crush properly.
  • Strain and cook for at least 5 minutes after adding dry masala.
Ingredients to make Green chutney:


1 cup chopped coriander 
1/2 cup chopped mint leaves
5 -6 green chilies
2 tea spoon chopped ginger
1 tea spoon roasted cumin powder
1 table spoon curd
            or
1 tea spoon lemon juice
Salt to taste
1 table spoon roasted peanut - crushed


Method to make Green Chutney:
  • Crush all the ingredients of chutney by adding sufficient water. 
Ingredients to make Garlic Chutney:


10 - 12 cloves garlic 
3 - 4 table spoon red chilly powder
1 table spoon sesame seeds
Salt to taste


Method to Make Garlic Chutney:
  • Mix all the ingredients if garlic chutney and crush in blender after adding some water.
  • Try to add least water, and add more when needed.

  • Mix grated khoya and sugar properly.
  • In a non � stick pan heat the mixture of khoya snd sugar at slow flame. Stir continually.
  • Once sugar dissolves, add cashew powder and cardamom powder.
  • Cook and stir continually at slow flame. Cook till soft lumps are formed and the mixture leaves the pan.
  • Roll on the slightly greased flat surface. Let it cool at room temperature.
  • Apply silver foil and cut in desired shape and size.
  • All time favorite and hygienic Kaju Katli is ready to serve.

How to Make Shrikhand

Recipe by Naiya Sheth : Learn how to make Shrikhand. This is a typical Indian sweet dish. This homemade recipe contains lots of curd � yogurt, so it is full of calcium. Enjoy this easy and hygienic sweet. You can say it is calcium rich Indian desert.


Preparation time � 10 minutes 
(excluding hanging and keeping time)
Cooking time � nil
Serves � 6 people

Ingredients to make Shrikhand:

� kilo curd or plain yogurt
250 to 300 grams powder sugar
A few strands saffron
1 tea spoon cardamom powder
� table spoon sliced pistachio
� table spoon sliced Almonds

For garnishing:

� table spoon sliced pistachio
� table spoon sliced Almonds
1 tea spoon cardamom powder
A few strands saffron

Method to make Shrikhand:

  • Hang curd in a clean muslin cloth overnight in the refrigerator.
  • Rub saffron in to � table spoon milk till well broken and dissolve.
  • After 6 to 7 hours transfer from cloth to bowl and add saffron, sugar and cardamom powder and mix well.
  • Keep aside for 10 to 15 minutes. Again beat properly.
  • Add remaining nuts and mix well.
  • Transfer in a serving bowl and garnish with almonds, pistachio, cardamom powder and saffron.
  • Chill in refrigerator before serving.
  • Chilled shrikhand is ready to serve. Serve it with roti or puri.

Diwali Special - Spongy Chocolate Balls With Hot Chocolate Sauce

This is a homemade recipe for spongy chocolate balls with Hot Chocolate Sauce. It is full of surprise. A great combination of chocolate and vanilla is made here, with a great fill of chocolate truffle sauce. If sponge cake is ready it is very quick to prepare this recipe.

Ingredients to make Spongy Chocolate Balls with Hot Chocolate Sauce:


For coating:

1 cup chocolate sauce

For coating:


1 cup melted dark chocolate

For filling:

125 gram grated dark chocolate
100 gram single fat cream

Ingredients to make Chocolate Sauce:

1/2 cup milk
50 gram grated dark chocolate

Method to make Chocolate sauce:
  • Mix both ingredients in a microwave safe bowl and cook in microwave till chocolate melts properly.
Method to make Spongy Chocolate Balls  with Hot Chocolate Sauce:

For chocolate truffle:

  • Melt dark chocolate in microwave for 50 seconds at MICRO HI.
  • Add single fat cream to it and mix well. Keep a side.
    For Spongy Chocolate Balls:

    • Crumble vanilla sponge cake by hands properly. Add sugar syrup or simple water to it as per taste and make dough so that you can make balls from it.
    • Make small equal size balls from it and stuff chocolate truffle sauce inside it. Seal the ball properly. Keep a side.
    • Repeat the same process for remaining.
    • Now take melted dark chocolate and dip sponge balls to it. Place over butter paper. Repeat the same for remaining.
    • Keep in refrigerator for 2 to 3 hours.
    • At the time of serving place chocolate balls in a serving bowl and pour hot chocolate sauce over it.
    • Sweet and surprising Spongy Chocolate Balls with Hot Chocolate Sauce are ready to eat.

    How to Make Dal Fry

    Learn how to make Dal Fry. This is one of the favorite recipes of Indian cuisine, which is served with plane rice or jeera rice. Dal fry is known as dal tadka also.

    Preparation time - 10 minutes

    Serves - 4 people
    Ingredients to make Dal Fry:

    1/2 cup mung dal - yellow
    1/2 cup toovar dal
    1/2 cup chana dal -gram dal
    2 dry red whole chilly
    1 tea spoon ginger paste
    1 tea spoon garlic paste
    1 big onion finely chopped
    1/4 tea spoon turmeric powder
    1 small blanched tomato finely chopped
    Salt to taste
    1 table spoon oil
    1 table spoon ghee
    1 tea spoon cumin seeds
    1 pinch asafoetida

    For garnishing:

    Fresh coriander leaves

    To serve with:

    Jeera rice

    Method to make Dal Fry:
    • Wash and soak dals together for at least 30 minutes. (To reduce cooking time.)
    • Pressure cook them till the dals are tender. Keep a side; let it come at room temperature.
    • In another pan heat oil and ghee and add cumin seeds, when seeds crackle add asafoetida and then add onion.
    • Fry till onion turns transparent. Now add ginger garlic paste and whole red chili and stir.
    • Add tomato and cook till oil appears. 
    • Add properly boiled dals to it. Add spices and cook till boil.
    • Garnish with coriander leaves.
    • Hot and delicious Dal fry is ready to serve. Serve it with jeera rice.

    400 gram condensed milk
    2 1/2 table spoon milk powde
    500 gram paneer
    1/4 tea spoon cardamom powder
    1 pinch saffron


    For garnishing: 


    Chopped almonds
    Chopped Pistachio


    Method to make Kalakand:

    • Mash paneer coarsely and mix in milk powder and condensed milk.
    • Heat the mixture in a non stick pan at medium flame. Stir continually.
    • When mixture becomes thick and starts leaving the sides of the pan. Remove from flame.
    • Spread into a greased plate.
    • Sprinkle cardamom powder, almonds,pistachio and saffron over it.
    • Let Kalakand cool and than cut in required size and shape.

    How to make Gujarati Kadhi

    Ingredients to make Gujarati Kadhi:


    1 cup sour curd (medium sour)
    2 table spoon gram flour - chana flour 
    1 tea spoon ginger paste
    2 tea spoon green chilly - finely chopped
    3 cups water
    Salt to taste
    4 to 5 table spoon sugar
    1 small piece cinnamon 
    2 pieces cloves
    2 tea spoon ghee
    8 to 10 curry leaves
    1/2 tea spoon mustard seeds
    1/2 tea spoon cumin seeds
    1 pinch asafoetida



    For garnishing:


    Fresh coriander leaves


    Method to make Gujarati Kadhi:
    • First of all in a big microwave proof bowl mix whipped curd, gram flour,green chilly, ginger paste and water. Mix properly. Blend if needed.
    • Now add salt and sugar to it. 
    • Cook for 4 minutes at MICRO HI. Stir in between after 2 minutes.
    • Transfer in microwave proof serving bowl. 
    • In another pan heat ghee on fire. Add mustard seeds and cumin seeds to it. When they crackles add asafoetida, curry leaves, dry red chilly, cloves and cinnamon.
    • Pour it to the kadhi.
    • Again cook for 3 minutes at MICRO HI.
    • Garnish with coriander leaves.
    • Piping hot Gujarati Kadhi is ready to serve. Serve it with pulav, khichdi or rice.
    Tips:
    • Cooking timing may differ as per the microwave.
    • You can change cooking time as the required thickness of kadhi.

    How to make Masala Khichdi

    Ingredients to make Masala Khichdi:


    1 cup washed and soaked basmati rice
    1/4 cup mung dal - yellow
    2 table spoon chana dal - gram dal
    1/2 table spoon ghee
    1/2 table spoon oil
    Salt to taste
    1/4 tea spoon turmeric powder
    3 to 4 green chilly - crushed
    1/4 tea spoon ginger paste
    1/2 tea spoon garlic paste
    1 big onion - chopped
    1 small potato - chopped
    1 small carrot - chopped
    1/4 cup green peas
    1 table spoon garam masalo
    8 to 10 curry leaves
    3 to 4 cups water 
    3 to 4 whole dry red chilly
    1/2 tea spoon mustard seeds
    1/2 tea spoon cumin seeds
    1/4 tea spoon asafoetida


    For Garnishing:


    Finely chopped coriander


    To serve with:


    Roasted Papad
    Gujarati kadhi
    Masala curd


    Method to make Masala Khichdi:

    • In a microwave proof big bowl mix ghee, oil, mustard seeds, cumin seeds, dry  masala, green chilly, curry leaves, dry red chilly, onion, garlic, ginger, vegetables and asafoetida. Cook for 2 minutes at MICRO HI.
    • Add soaked rice and again cook for 2 minutes.
    • Add water and salt and cover half the bowl. Cook for 8 minutes at MICRO HI. Stir.
    • Again cook for 4 minutes at MICRO MED. Stir.
    • At last cook for 2 minutes at MICRO LOW. And stand for 2 minutes.
    • Garnish with coriander leaves.
    • Piping hot Masala Khichdi is ready to serve. Serve it with Gujarati Kadhi or Masala curd and papad.

    Ingredients to make Jeera Rice:


    1 cup washed and 20 minutes soaked -
    Basmati rice
    1 piece cinnamon
    2 pieces cloves
    1 tea spoon ghee
    1 tea spoon cumin seeds
    4 to 5 cup water
    Salt to taste (opt.)


    Method to make Jeera rice: 

    • In a big microwave safe bowl mix ghee, rice, clove, cinnamon and cumin seeds. 
    • Cook for 1 minute at MICRO HI.
    • Add salt and water. Cover half of the bowl and than cook for 7 minutes at MICRO HI. Stir.
    • Cook for 3 minutes at MICRO MED. stir.
    • Again cook for 2 minutes at MICRO LOW. Stand for 2 minutes. 
    • Hot and quick Jeera rice is ready to serve with dal fry or dal makhani.

    Jain style bharwa bhindi


    Recipe By : Kalyani

    Ingredients to make Jain style Bharwa Bhindi: 

    Bhindi / Lady's finger - 150 gms
    Oil - 5 - 6 tsp
    Salt to taste
    Jaggery / Sugar - 1/2 tsp (optional)
    Kasuri Methi - crushed - 1 TBSP
    Tempering : cumin seeds, curry leaves,
    mustard seeds
    Garnish - green Coriander , grated coconut + nylon sev (opt)

    Dry masala powders (each about 2 TBSP, except turmeric & chilli powder):

    Cumin Powder
    Coriander Powder
    Amchur / Dry Mango Powder
    Turmeric - 1/2 TBSP
    Chilli powder - 1 TBSP

    Method to make Jain style Bharwa Bhindi

    1. Wash and pat dry the lady's finger. Trim the top (caps) of the bhindi and make a long slit (not cutting through the whole) along the lady's finger.
    Dry Spice mixture

    2. Mix salt along with the dry masala powders. Add 2 TBSP of Oil + 1 tsp of water to this masala mixture, and mix well to a slurry like mixture. 

    3. Stuff this wet-dry mixture into each slit lady's finger and leave for 5 mins. Add kasuri methi at this stage or later. Ensure the spice mixture is not runny
    In a non stick pan / kadai, heat oil and splutter the tempering - cumin, mustard seeds and curry leaves.
    If you are left with any leftover masala (from the stuffing mixture), add to the sabji now and mix well.

    4. Add the stuffed bhindis and lightly toss them . Cook them uncovered on medium-low flame for 10 mins (keep tossing them from time to time to cook on all sides).

    5. Once the bhindis look slightly seared and brown, add jaggery, kasuri methi and coriander leaves and toss them again, taking care not to break them as they would be tender.

    6. Garnish with grated coconut and nylon sev and serve hot with Rotis and Dal ! yumm !

    sambhar

    Preparation time - 10 minutes
    Cooking time - 30minutes




    Ingredients to make Sambhar
    :

    1 cup toovar dal
    1 table spoon mung dal
    200 gms bottle gourd - pieces
    6 to 8 drumsticks - pieces (opt.)
    1 tea spoon mustard seeds
    1 tea spoon fenugreek seeds
    6 to 7 curry leaves
    1 pinch asafoetida
    2 table spoon sambhar masala
    2 small onions - finely chopped
    2 table spoon tamarind powder
    1 table spoon chopped coriander
    1big tomato - finely chopped
    1 tea spoon onion garlic paste
    2 table spoon oil
    2 to 3 whole dry red chilly
    salt to taste

    Method to make Sambhar:
    • Wash the dal thoroughly and add 4 cups of water.
    • Pressure cook the dal until soft. Blend the cooked dal in a mixer. Cook drum sick, half of the onion and bottle gourd with dal.
    • Soak the tamarind in a little water and keep aside for 30 minutes. Rub the tamarind by hand and strain. Add to the dal mixture.
    • Heat the oil in another pan and fry the mustard seeds and fenugreek seeds until they begin to crackle. Add the curry leaves and whole red chilly and fry for 1/2 minutes.
    • Add chopped onion and garlic paste to it fry for 2 minutes. Add chopped tomato to it and fry till tomato is soft. Add sambhar masala and all dry masala to it. Fry for 1 minute.
    • Add the mixture to dal and let it come to boil. Add paste and boil for at least 5 to 7 minutes.
    • Garnish with chopped coriander.

    Preparation time - 10 minutes

    Cooking time - 30 minutes
    Serves - 4 persons

    Ingredients to make Dal Makhani:

    3/4 cup whole urad - whole black lentil
    2 table spoon rajma - kidney beans
    2 table spoon butter 
    1 tea spoon cumin seeds
    2 to 3 green chilly crushed
    1 pinch cinnamon powder 
    1 pinch clove powder 
    1 big onion - finely chopped
    2 big tomato's puree
    1/2 tea spoon ginger garlic paste
    1 1/2 tea spoon red chilly powder
    1 tea spoon turmeric powder
    1/2 cup fresh cream (can take low fat cream)
    Salt to taste


    For garnishing: 


    Fresh coriander - finely chopped


    To serve with:


    Jeera rice


    Method to make Dal Makhani:
    • wash and soak the whole urad and rajma overnight or at least 6 to 7 hour in warm water.
    • Drain soaked water and add 2 cups of water and salt and pressure cook for 20-25 minutes till the dals are overcooked.
    • Let it come at room temperature.
    • Mash dals roughly and keep a side.
    • Heat the butter in a deep pan and add the cumin seeds. When the cumin seeds crackle, add the green chillies, cinnamon, cloves, onions and ginger-garlic paste and saut� till the onions turn golden brown or light brown in colour. (in stead of butter you can take oil also.)
    • Add the red chilli powder, turmeric powder and tomato puree and cook at a medium flame till the mixture leaves oil.
    • Add mashed dals and salt to taste. Add water if required. Cook for 15 minutes at slow flame or till boiling. Add cream and mix well.
    • Garnish with chopped coriander. Hot and spicy Dal Makhani is ready to serve. (can be garnished with cream also.)
    • Serve it with jeera rice.

    How to make Date Cake

    Learn how to make Date cake. This is a home made recipe for tea time cake. A rich Date cake made in microwave in just 3 minutes. So, enjoy goodness of dates in the form of cake. By adding nuts to it we can add more health in the morning.


    Preparation time - 10 minutes
    Cooking time - 3 minutes
    Serves 8 to 10 persons


    Ingredients to make Date Cake:


    140 gram self rising flour
    60 gram margarine
    1/4 tea spoon vanilla essence (opt.)
    200 gram chopped dates
    25 gram cashew
    25 gram walnut
    2 table spoon caster sugar (opt.)
    1/2 can condensed milk
    1 tea spoon baking soda
    1/4 tea spoon soda bi carb
    1/2 cup water


    Method to make Date cake:
    • Sift flour and baking soda 2 to 3 times.
    • Soak chopped dates in 1/2 cup water with soda bi carb.
    • Mix all the ingredients in a bowl. If needed add water.
    • Pour the mixture in a silicone cup cake mold or paper cup.
    • Place on a turn table and cook for 3 minutes at MICRO HI.
    • Yummy and healthy Date Cake is ready to serve.
    Tips:
    • For more healthy version you should use black dates.
    • As it is a break fast cake don't need to do icing on it. But can be garnished with nuts.
