How to make Gajar Ka Halwa

Learn how to make Gajar Ka Halwa. Here it's a classic Indian mithai - sweet. It is a very rich traditional Indian sweet. It's a homemade recipe of Gajar Ka Halwa. Normally it takes a long time to make it. But we are going to make it in microwave. Means a delicious sweet with less efforts and less fat.

Preparation time - 5 minutes
Cooing time - 10 minutes
Serves - 4 person


Ingredients to make Gajar Ka Halwa:


2 cups grated carrot
1 cup milk
1/4 cup milk powder
4 table spoon sugar
1 table spoon ghee
1/2 tea spoon cardamom powder

For garnishing:


Cardamom powder

chopped or sliced almonds
chopped cashews
Slices or chopped pistachio
Cardamom seeds


Method to make Gajar Ka halwa:
  • In a microwave proof bowl mix ghee and carrot and cook for 2 minutes at micro hi.
  • If carrots are not soft again cook for 1 minute. (cooking time may be different depending upon make of microwave and thickness of carrot.)
  • Dilute milk powder in milk and add to carrot mixture. Again cook for 2 minutes.
  • Add sugar and cook for 2 to 3 minutes.
  • Garnish with cashews, pistachio, cardamom and almonds.
  • Hot and mouth watering Gajar Ka Halwa is ready to serve.

How to make Mexican Quesadilla

Learn how to make Mexican quesadilla.

Mexican food is very famous for it's spicy and tangy taste. Here it's a homemade recipe for Mexican Quesadilla. But it's a with fusion  taste. It is rich with beans as well as cheese and paneer, to fulfill the requirement of vitamin, protein and calcium. Here in this recipe I have used tortillas with the recipe from pizza wrap. Even tortillas can be stored in freezer for 2 to 3 months if sealed in zip lock bag.
Preparation time - 25 minutes
Cooking time - 20 minutes
Serves - 4 person

Ingredients to make Mexican quesadilla:

4 big tortillas
1/2 cup baked beans
1/4 cup boiled kidney beans
1/4 cup soy beans
3 table spoons boiled sweet corns
1/2 cup small cubes of paneer
1/4 cup process cheese
1/4 cup mozzarella cheese
1 onion finely chopped
1 tomato finely chopped
2 to 3 green chilies finely chopped
Salt to taste
1 table spoon oil
1/4 cup chopped coriander leaves
2 tea spoon garlic paste

For assembling:

2 table spoon salsa sauce
Butter or oil for grilling or frying 
4 table spoon cheese

To serve with:


Tomato ketch up
Salsa sauce

Method to make Mexican Quesadilla:
  • Heat oil in a pan and add onion, garlic to it. Fry till onion turns light brown. 
  • Now add spices and boiled beans to it. Mix well and cook for 2 minutes.
  • Add coriander leaves, paneer and cheese to it. Mix well and remove from flame.
  • Let it cool at room temp.
Method to assemble Mexican Quesadilla:
  • Take a tortilla and spread salsa sauce over it. Now spread bean's stuffing over it and spread cheese. Cover with another tortilla. Press gently.
  • Repeat the process for remaining.
  • Shallow fry with oil or butter on non stick griddle - tavi. Or cut the quesadilla in 6 equal parts and grill them. Apply butter on both sides of them. 
  • Garnish with greens of spring onion. Hot and spicy Mexican quesadillas are ready to serve. Serve with tomato ketch up or salsa sauce.

How to make Pizza Wrap

Recipe by Naiya Sheth : Learn how to make Pizza Wraps. Actually me and my family love pizza. So I do more n more experiments on it to make it different and more healthy. So, as a result of that experiment I got Pizza Wraps. I would like to share this easy and quick recipe with you. This is a totally home made recipe. And if pizza sauce, Vegetables and wraps are ready it is very easy and quick to assemble. An ideal recipe for kids party also. So enjoy this mouth watering recipe at home today. I always have pizza sauce in my deep freezer. So, I used that pizza sauce for this recipe also.
Preparation time - 15 minutes
Cooking time - 20 minutes
Serves - 4 person
Ingredients to make Pizza Wrap:
For wrap:
1 cup wheat flour
1 cup refined flour
1/2 tea spoon omam - ajwain 
2 table spoon oil
Salt to taste
1/2 tea spoon baking soda
2 table spoon curd
For stuffing:
1 cup pizza sauce
1/2 cup finely chopped onion
1/4 cup finely chopped capsicum
1/2 cup finely chopped paneer 
1/4 cup finely chopped tomatoes
1/4 cup boiled sweet corn
1 to 2 green chili finely chopped
Salt to taste
1 tea spoon chili flacks
1 tea spoon oregano
2 table spoon oil
1/2 tea spoon black paper powder
1/2 cup grated cheese
Method to make Pizza Wrap:
For wrap:
  • Mix all the ingredients of wrap and knead soft dough.
  • Cover and keep aside for half an hour.
  • After that roll medium size wraps from it and cook it on slow flame. Be careful that wraps are not crispy, cook it soft.
  • Keep a side, covered with wet cloth.
For stuffing:
  • Heat oil in a pan and saute vegetables in it. Add all dry ingredients and saute for 1 minute again.
For assembling Pizza Wraps:
  • Take a wrap and apply pizza sauce over it. Place stuffing over it. Spread cheese over it. Sprinkle chili flacks and oregano over it.
  • Fold the wrap from bottom first and than from sides. Place tooth pick if required. 
  • Repeat the same for remaining.
  • Apply some butter over it and grill for 2 minutes (opt.).
  • Hot and mouth watering Pizza Wraps are ready to serve or eat.
Tips for Pizza Wraps:
  • Make small tortillas if you want to serve as starter.
  • Saute vegetables in olive oil or butter for better taste. 
  • Grilling can be avoided. But it will be more tasty with melted cheese

Means a recipe full of vitamins and calcium. With a homemade recipe of fresh pita bread without oven. So enjoy this quick and easy recipe for breakfast as well as starter also. It can be prepared before 1 to 2 hours so, it's an appropriate recipe for parties also.  You can serve this with crackers, toss and vegetables also. 
Preparation time - 10 minutes
Cooking time 10 minutes


Ingredients to make  Yogurt Dip with Pita Bread:


For Pita:


1 cup refined flour
1 table spoon active dry yeast
2 tea spoon milk
2 tea spoon curd
1 pinch sugar
1 pinch soda bi carb
1 tea spoon oil
1 tea spoon baking soda
Salt to taste


For Yogurt Dip:


1 cup hung curd
1/4 cup cheese spread (opt.)
1/4 cup grated cucumber
1/4 cup grated carrot
2 table spoon very finely coriander leaves
Salt to taste
1/4 tea spoon chili flacks
1 to 2 green chilies very finely chopped
1/4 tea spoon oregano
1/4 Tea spoon sugar


Method to make Yogurt Dip with Pita Bread:


For Pita Bread:
  • Mix milk, sugar, yeast and curd in a small bowl. In another big bowl take refined flour, salt, oil, baking soda and soda bi carb. Add yeast mixture to it and knead soft dough from it. Knead with the help of oil. Use sufficiant normal water. Cover and keep aside for minimum 2 hours at warm place.
  •  After 2 hours make small balls from it and roll small pita from it. Cook on griddle - tavi at medium heat till light pink. Repeat the same for remaining.
  • Remove from flame and cut it in desired size.
For yogurt dip:
  • Remove excess water from cucumber.
  • Mix all the ingredients of yogurt dip in a bowl and mix well. 
  • Garnish with cucumber. Refrigerate for at least 30 minutes.
To proceed:
  • Serve yogurt dip in a serving bowl. Serve with pita bread.
  • Cool and trendy Yogurt dip with pita bread is ready to serve.
Serving suggestions:
  • This dip can be served with salted biscuits or malty grain biscuits also.
  • It can be served with vegetables like cucumber, carrot, capsicum etc.
  • Even toasted breads or mini toasts also can be taken.
  • It can be served with masala crispies and bread sticks also.

How to make Stuffed Bun

Recipe by Naiya Sheth : Learn how to make Stuffed Bun. Normally we are making or buying buns for pav-bhaji, burger, vada pav, hot dog etc. They are normal buns. But here it's a homemade recipe for stuffed buns. With this recipe you don't need to have additional side dish. Because they are soft and spicy. If you are making pizza at home you will defiantly find this recipe easy. So enjoy this tempting recipe for breakfast as well as snacks also.
Preparation time - 25 to 30 minutes
Cooking time - 15 to 20 minutes
Makes - 4 buns


Ingredients to make Stuffed bun:  


For outer layer:


1 cup refined flour
2 tea spoon milk 
2 tea spoon curd
1 table spoon active dry yeast
1 pinch sugar 
Salt to taste
1 pinch soda bi carb
1 tea spoon baking soda
1 tea spoon oil


For stuffing:


2 medium boiled potatoes 
1 tea spoon oil
2 table spoon par boiled carrot finely chopped
2 table spoon chopped coriander leaves
1 tea spoon boiled green peas
2 to 3 green chilies finely chopped
2 table spoon finely chopped onion
1 tea spoon cumin seeds
1/2 tea spoon turmeric powder
1/2 tea spoon garam masala powder
1 tea spoon sugar (opt.)
Salt to taste
1/2 tea spoon roasted cumin powder
1/4 tea spoon lemon juice


Method to make Stuffed Bun:


For dough:
  • Mix dry yeast, sugar, milk and curd in a small bowl. Keep aside for 5 to 7 minutes.
  • In other big bowl take refined flour and add salt, oil, soda bi karb and baking soda. Add above mixture to it. 
  • Make soft dough from it, add sufficient water. Knead properly with the help of oil. Keep at warm place for min. 2 hours. ( I put in O.T.G.)
For stuffing:
  • Heat oil in a pan, add cumin seeds. When it crackles add green chilies and vegetables. Mix well.
  • Now add dry spices and lemon juice. Mix well and cook for 2 minutes,
  • Add coriander and keep aside.
Method to assemble Stuffed Bun:
  • Preheat oven at 180`c temp. Line baking tray with aluminium sheet and grease it.
  • Gently knead proven dough and make equal size balls from it. 
  • Make small equal size balls from stuffing.
  • Take a ball and make a den in the middle of it. Put stuffing inside it and cover it properly. Make smooth bun.
  • Repeat the process for remaining.
  • Put them on baking tray, and  brush with butter or oil. Keep a side covered for 30 minutes. 
  • Bake it in preheated oven for 15 to 20 minutes at 180` c temp, or till the top turns golden brown. Grease with butter or oi.
  • Hot and tempting stuffed buns are ready to serve. Serve it with tea or coffee.
Tips:
  • This recipe is suitable for kids lunch box also.
  • Tests nice when cool also.
  • Baking time can be differ as per O.T.G.
  • Stuffing can be change as per taste.

Recipe by Naiya Sheth : Learn how to make Corn Cutlets. Normally we are use to have veg. cutlets. But here it's a homemade recipe for Corn cutlets, a very easy and delicious recipe made from sweet corn. It can be served for breakfast as well as snacks also. A good option for starter also.


Preparation time - 10 minutes
Cooking time 15 minutes
Serves 2 person


Ingredients to make Corn Cutlets:


1 cup boiled sweet corn
1 table spoon semolina
2 table spoons gram flour
          or
2 table spoon corn flour
2 to 3 green chili finely chopped
1 tea spoon ginger paste
1/4 cup finely chopped coriander leaves
1 tea spoon lemon juice
A pinch garam masalo
1 big potato boiled and mashed
1/2 red capsicum chopped
1/2 green capsicum chopped
Salt to taste
Corn flour for dusting
Oil for frying


To serve with:


Tomato ketch up


Method to make Corn cutlets:
  • Roughly crush half of the sweet corn. Mix all the ingredients in a big mixing bowl.
  • Make small petties from the mixture.
  • Roll it in corn flour. 
  • Heat oil in a pan and fry cutlets in it till light brown.
  • When fried remove from oil and drain on absorbent kitchen tissue.
  • Serve hot and delicious Sweet corn cutlets with tomato ketch up.
Tips for Corn Cutlets:
  • Finely chopped onion,cabbage and paneer can be added.
  • Dip frying can be avoided.

How to make Paneer Pizza

Recipe by Naiya Sheth : Learn how to make Paneer Pizza. Wow it's a pizza with my all time favorite paneer. Here in this homemade recipe marinated  paneer is used for better taste. It's a great treat of spicy paneer with cheesy pizza. Onion, capsicum and tomatoes are use with paneer. So, enjoy cooking this homemade soft base Paneer Pizza.

Preparation time 10 minutes

Cooking time - 20 minutes
Makes - 1 big pizza

Ingredients to make Paneer Pizza:

For Dough:


1 cup refined flour
2 tea spoon milk
2 tea spoon curd
1 table spoon dry yeast
Sugar a pinch
Salt to taste
1 tea spoon baking powder
1 pinch soda bi carb
1 tea spoon oil


For topping:


1 1/2 to 2 table spoon pizza sauce
1 small onion chopped
1 small tomato chopped de - seeded
1/2 capsicum chopped
1/4 cup mozzarella cheese
1/4 tea spoon chili flacks
1/4 tea spoon oregano
1/2 to 3/4 cup paneer


For marination:


2 to 3 table spoon hung cud
1/2 tea spoon red chili powder
1/2 tea spoon black pepper powder
1 tea spoon tanduri masala powder
                   or 
1 tea spoon chaat masala powder
1/2 tea spoon lemon juice
1 tea spoon ajwain - omam
1 tea spoon oil
Salt to taste

Method to make Paneer Pizza:

For Dough:
  • Dilute dry yeast with milk, curd and sugar. Keep a side for 2 -3 minutes, add it to flour and then add salt, baking powder, soda bi carb and oil. Make soft dough from it, use water if required. Knead with oil and keep a side covered for minimum 2 hours.
To assemble Paneer Pizza:
  • Mean while mix all ingredients of marination in a bowl and add paneer cubes to it. Keep a side for 15 to 20 minutes. Toss paneer in a non stick pan for 2 minutes and add onion, capsicum and tomatoes to it. Again cook for 2 minutes. Keep a side.
  • Take pizza dough ton the platform and roll pizza base from it with the help of oil or dry flour. Prepare single base.
  • Spread pizza sauce over it and then spread grated mozzarella cheese over it. Above all spread tossed vegetables and paneer. Sprinkle chili flacks and oregano. 
  • Bake for 15 to 20 minutes in preheated oven at 150`.
  • Hot and tempting Paneer Pizza is ready to serve.

Preparation time - 2 hours
Cooking time - 20 minutes




Ingredients to make Chocolate Cheese Cake:


1 1/2 cup milk
2 table spoon corn flour
1 1/2 table spoon cocoa powder
1/3 cup sugar
10 to 15 chocolate flavor biscuit
1/2 table spoon melted butter
2 tea spoon gelatin diluted in 3 table spoon water
50 gram single fat cream
75 gram grated dark chocolate
1/3 cup grated paneer
1/3 cup cheese spread
1 recipe chocolate sponge cake

For decoration: 


Chocolate truffle sauce


Method to make Chocolate Cheese Cake:
  • Make chocolate sponge cake as recipe. Keep aside and when cool divide in to two parts.
  • Mix single fat cream and grated dark chocolate in a pan cook at very slow flame or in microwave oven till chocolate melts. Keep a side.
  • In another pan mix milk, corn flour, cocoa powder and sugar. Cook on medium flame till thick. Remove from flame and let it cool at room temp.
  • Roughly crush chocolate flavor biscuit and mix it with melted butter. Keep a side.
  • When cool add gelatin mixture, chocolate mixture. Mix well. Add grated paneer and cheese spread and mix well. Keep in refrigerator for at least 30 minutes.
  How to assemble Chocolate Cheese Cake:
  • First of all in a loose bottom cake tin place half part of chocolate sponge cake. Then spread half portion of chocolate custard over it. Refrigerate for 25 to 30 minutes. Remove from refrigerator and spread chocolate biscuit mixture over it. Spread it properly and press very delicately. Again keep in refrigerator for 25 to 30 minutes. 
  • Remove from refrigerator and again pour remaining chocolate custard over it. Keep in refrigerator for 2 to 3 hour. When set remove from refrigerator and decorate with chocolate truffle sauce.
  • Yummy chocolate cheese cake is ready to serve.
Tips for Chocolate Cheese Cake:
  • Chocolate truffle sauce is used for decoration because the whole recipe is rich in cal. In fact rich cream icing also can be done.
  • In case of loose bottom cake tin is not available place a big butter paper over normal cake tin and assemble chocolate cheese cake in it. When set remove carefully from cake tin and than remove butter paper.
  • In this recipe there 2 layers one of sponge cake and other of chocolate biscuit, only cake layer or biscuit can be taken as single layer. Even cake or biscuits can be taken for both layers.

Ingredients to make Paneer Peanut Bread Roll: 


8 to 10 slices of bread
100 grams roasted peanuts
100 grams grated paneer
50 grams butter
1/2 tea spoon crushed mustard seeds
50 gram hung curd
1 tea spoon grated carrot
1 tea spoon chopped coriander leaves
Salt to taste 
1 tea spoon chopped green chilies
oil for frying


To serve with:


Tomato ketch up


Method to make Paneer Peanut Bread Roll:
  • Remove sides from bread. Keep aside.
  • Remove skin from roasted peanuts and roughly crush it.
  • In another bowl mix hung curd, paneer, butter, peanuts, mustard seeds, salt, carrot, coriander and green chilies properly.
  • Spread above mixture on bread slice and roll it properly. Seal with some water or rice flour slurry.
  • Use tooth picks if needed.
  • Repeat the same for remaining.
  • Heat oil in a pan and fry rolls till light brown at med-high flame.
  • When done remove from flame and drain on absorbent tissue paper.
  • Testy and healthy Paneer Peanut Bread Rolls are ready to serve. Serve it with tomato ketch up.

I know it is surprising to read a recipe about veg. lollipop. Because normally we are use to have sweet lollipop. But here it's a homemade recipe for healthy and spicy vegetable lollipop. This homemade recipe contains lots of vegetables and paneer. So,it is full of vitamins and calcium.


Preparation time - 15 minutes
Cooking time - 15 minutes
Serves - 4 person


Ingredients to make Veg. Lollipop: 


250 grams boiled and mashed potatoes
1 onion finely chopped
1/4 cup boiled green peas
1small capsicum finely chopped
1 small carrot finely chopped
1/4 cup boiled sweet corn
1/4 cup chopped coriander leaves
4 to 5 finely chopped green chilies
1 1/2 tea spoon red chili powder
1 tea spoon dry mango powder
250 grams paneer- cottage cheese grated
1/2 to 3/4 cup dry bread crumbs
12 to 15 par boiled baby corns
Salt to taste
1 cup gram flour
Oil for frying


To Serve with:


Tomato ketch up


Method to make Veg. Lollipop:
  • Mix mashed potatoes and grated paneer in a big bowl, now add all vegetables and spices to it. Mix well.
  • Make thick batter from gram flour. Add salt and red chili powder to it.
  • Make medium size balls from the mixture and insert baby corn in it. Repeat the same for remaining.
  • Dip lollies in the gram flour mixture and roll in dry bread crumbs.
  • Heat oil in a pan and dip fry lollies in it. Fry till golden brown.
  • When done remove from oil and drain over absorbent tissue.
  • Hot and healthy Veg. Lollipops are ready to serve. Serve them with tomato ketch up. 
Tips for veg. Lollipop:
  • In stead of baby corns tooth picks or ice cream sticks can be taken.
  • In that case cover sticks with aluminium foil.
  • vegetables can be added or omitted as per the choice.
  • In stead of dip frying shallow frying or grilling can be done.

Makes - 150 grams approx.



Ingredients to make Jam Sandwich Cake:


1/2 cup refined flour
1/2 tea spoon baking soda
1/4 tea spoon soda bi carb
1/4 cup butter
1/4 cup powder sugar
1/4 tea spoon vanilla essence
3/4 to 1 cup mix fruit jam
Icing sugar for dusting
Milk


Method to make Jam Sandwich Cake:

  • Beat jam and keep aside.
  • Sift flour, baking powder and soda bi carb 2 to 3 times. Keep aside.
  • Beat butter and sugar together properly. Now add 1/4 cup jam and vanilla essence to it and beat again. 
  • Add flour mixture to it and pour milk for dropping consistency.
  • Pour the mixture in a greased and dusted cake tin. 
  • Bake for 25 minutes at 180`c temp. in preheated oven.
  • When done remove from oven and let it cool at cooling rack.
  • When cool divide the cake horizontally into 2 parts. Soak with plane water or sugar syrup. Apply jam over upper part of lower layer. And place the upper layer carefully over it.
  • Dust with icing sugar.
  • Yummy and different Jam Sandwich Cake is ready to serve.
Tips for Jam Sandwich Cake:
  • Any flavor of jam can be used.
  • Mixing of jam in the cake before baking can be avoided. It will maintain sugar.

Preparation time - 10 minutes
Cooking time - 15 minutes
Serves - 4 person


Ingredients to make Paneer Kachori:




For outer layer:


300 grams refined flour
1 1/2 table spoon ghee or butter
1/2 tea spoon baking soda
2 table spoon curd
Salt to taste
Milk for kneading dough


For stuffing:


250 grams paneer 
1 table spoon gram flour
1 tea spoon garam masalo
Salt to taste
1 tea spoon green chili paste
1 table spoon chopped coriander
oil for frying


To serve with:


Tomato ketch up


Method to make Paneer Kachori:
  • Mix all the ingredients of outer layer and make soft dough. Cover it and keep a side for at least 45 minutes.
  • Heat 1 table spoon oil in a pan and fry gram flour in it for 1 minute. Now add crumbled paneer and masala to it and mix well.
  • Cook for 1 minute only. Remove from flame and add chopped coriander.
  • Let it come at room temp. Make small balls from them.
  • Make small balls from dough and make puri from it. Fill paneer stuffing in it and cover it. Repeat the same for remaining.
  • Heat oil in a pan and dip fry kachori in it. Fry till light brown. When done remove from oil and drain on absorbent tissue.
  • Hot and tempting Paneer Kachori is ready to serve. Serve with tangy tomato ketch up.

1 table spoon cocoa powder
1 table spoon instant coffee powder
1 tea spoon drinking chocolate powder
1/4 cup chopped walnuts
1/4 to 1/2 cup luke warm water


For icing:


1/2 cup chocolate truffle sauce
2 table spoons icing sugar
1/4 cup chopped walnuts


Method to make Mocha Walnut Marble Cake:
  • Mix 1/2 tea spoon refined flour with chopped walnuts. 
  • Sift refined flour, baking soda and soda bi carb together for 2 to 3 times.
  • Beat butter and sugar together and add refined flour mixture to it occasionally. Mix well.
  • Divide it in to 2 parts. Add vanilla essence to 1 st part.
  • First of all mix cocoa powder, drinking chocolate powder and instant coffee powder to 2 table spoons warm water. and mix it in the 2 nd part.
  • Add warm water to vanilla portion. Be care full while adding water. Better should be thick.
  • In a greased and dusted baking tin pour big drops of vanilla better and chocolate better alternatively. Sprinkle walnuts over it.
  • Repeat the process for remaining. At last tap the tin to remove air bubble.
  • Bake the cake for 25 minutes at 160`temp. in preheated oven.
  • When done, remove from oven and place it over cooling rack. Let it cool properly at room temp.
  • When ready spread chocolate truffle's thin layer over the cake and sprinkle icing sugar or walnuts over it. Both can be sprinkled at the same time.
  • Mocha Walnut Marble Cake is ready to eat. make thick slices from it and enjoy.
Tips to make Mocha Walnut Marble Cake:
  • Mix 100 grams single fat cream and 125 grams dark chocolate and cook for 2 minutes in microwave oven to make chocolate truffle sauce. Coffe powder can be added.
  • For better marble effect use square or rectangle cake tin. So that slices can be made as bread.
  • Always soak the cake with plane water or sugar syrup before icing.

1 1/2 tea spoon ginger garlic paste
1/4 tea spoon cumin seeds
Salt to taste
1 tea spoon roasted cumin powder
1 tea spoon dry fenugreek leaves - kasuri methi


For garnishing:


Finely chopped coriander leaves


Method to make Kadhai Corn Paneer:
  • Par boil thin slices of baby corns. Keep aside.
  • Cut paneer in medium size cubes. Keep aside.
  • In a pan heat oil and add cumin seeds. When it crackles add ginger garlic paste, cook for 1 minute. 
  • Add chopped onion and cook till light brown. When cooked add tomatoes and dry masalas. Pour water if needed.
  • Let it cook properly. Add baby corn,capsicum and paneer and cook for 2 to 3 minutes.
  • Garnish with chopped coriander leaves. Hot and healthy Kadhai Corn Paneer is ready to serve. 
Tips to make Kadhai Corn Paneer more testy:
  • Instead of baby corn corn can be used.
  • For better result always use fresh homemade paneer.

Serves - 3 person


Ingredients to make Cheese Samosa:


For stuffing:


1/2 cup mozzarella cheese
1/2 cup cottage cheese - paneer
1/2 tea spoon chili flacks
1/2 tea spoon oregano
1/4 cup finely chopped coriander leaves
2 tea spoon finely chopped green chilies
Salt to taste


For outer layer:


2 cups refined flour
2 table spoon butter
Salt to taste
1 tea spoon lemon juice
Oil for frying


Method to make Cheese Samosa:
  • Make soft dough from all the ingredients of outer layer. Knead properly and keep aside covered.
  • Mix all the ingredients of stuffing gently. Be careful while adding salt.
  • Make small balls from dough and roll small puries. Divide them into 2parts, Make cone shape from it and fill stuffing in it. Seal the borders properly. 
  • Repeat the same process for remaining.
  • Heat oil in a pan and fry samosas at medium flame.
  • Fry till light pink. When done, remove from flame.
  • Darin over absorbent tissue. 
  • Hot and tempting cheese samosa is ready to serve. Serve it with chili sauce.  
Tips to make Cheese Samosa more healthy:
  • Add fresh vegetables like corn, onion, capsicum etc. as per the choice.
  • Use more paneer to make it more healthy.
  • For better result use homemade fresh paneer.

Ingredients to make Veg.Seekh Kabab:


2 big potatoes boiled and mashed
1/4 cup french beans finely chopped and par boiled
1/4 cup cabbage finely chopped
1/4 cup carrot grated
1/4 cup capsicum finely chopped
2 1/2 table spoons gram flour
1 tea spoon ginger paste
1 tea spoon garlic paste
1 tea spoon finely chopped green chilies
1/2 tea spoon garam masala powder
Salt to taste
1/2 tea spoon chaat masala powder
1/4 cup finely chopped onion
1/2 tea spoon roasted cumin powder
Oil


To serve with:


Onion rings
Tomato ketch up
Green chutney


Method to make Veg.Seekh Kabab:
  • Heat 2 tea spoons oil in a pan, add onion, carrot, capsicum, french beans and cabbage and saute for a minute.
  • Add chili, garlic and ginger paste to it. Mix well.
  • Add gram flour and cook for 2 to 3 minutes, remove from flame. Keep aside.
  • In another pan mix boiled potatoes and dry masla and veg.mixture.
  •  Take a satay stick and hand full of the potato mixture and press it so that the mixture stick to the satay stick.
  • In a pan add 1 to 2 tea spoons of oil and grill veg.seekh kabab.
  • Veg.seekh kabab is ready to serve. Serve it with tomato ketch up, green chutney or onion rings. TRPHJ4WP3B2H

As we all know Veg. Kolhapuri is a great mixture of lots of vegetables. So, enjoy this homemade recipe. 

Preparation time - 15 minutes
Cooking time - 20 minutes
Serves - 4 persons

Ingredients to make Veg. Kolhapuri:

1 medium carrot dies cut
1/2 cup cauliflower
1 potato dies cut
8 to 10 french beans
1/4 cup green peas
1 tea spoon ginger paste
1 tea spoon garlic paste
2 onions finely chopped
2 tomatoes finely chopped
3 table spoon oil
1/4 cup grated dry coconut
1/4 tea spoon fresh clove powder
1/2 tea spoon garam masala powder
1/2 tea spoon fennel seeds powder
1 small piece cinnamon
1/2 tea spoon cumin seeds 
8 to 10 black pepper 
1/4 tea spoon garam masala powder

For garnishing:

1/4 cup coriander chopped leaves

Method to make Veg Kolhapuri:
  • Par boil carrots, potato, cauliflower, french beans and green peas. Keep aside.
  • Grind ginger and garlic to a fine paste. Keep a side.
  • Heat oil in a non stick pan, add coconut, cloves, black pepper, poppy seeds, coriander seeds and red chilies. fry for 2 minutes. Add 2 table spoons of chopped onion and cook for 2 minutes again. 
  • Let it cool at room temp. Grind to a paste.  Keep aside.
  • In another pan again heat oil and add remaining onion and saute till light brown.
  • Add ginger garlic paste and cook for 2 minutes or till the mixture is light brown.
  • Add chopped tomatoes, chili powder, turmeric powder and masala paste. Add 1/2 cup water and cook for 2 minutes.
  • Add par boiled vegetables and salt to taste. Cook for 5 to 6 minutes at low flame. At last sprinkle garam masala powder and mix well.
  • Garnish with finely chopped coriander leaves. 
  • Hot and tempting Veg. Kolhapuri is ready to serve. 
  • Serve it with Indian bread like roti, naan, kulcha etc.
Variations for making Veg. Kolhapuri:
  • Selected vegetables can be added or omitted.
  • Proportion of the vegetables can be changed as per requirement.
  • Cottage cheese can be added with vegetables. In that case garnishing can be done with grated cheese or paneer.

Alu Methi is one of the healthy Indian vegetable, specially in winter. It is very easy to make and nice in taste.

Preparation time - 10 minutes
Cooking time - 10 -15 minutes
Serves - 4 person

Ingredients to make Alu Methi:

1 kilo fresh fenugreek leaves ( methi) - finely chopped
1 table spoon oil
3 to 4 whole dry red chilies
1/4 tea spoon asafoetida
2 tea spoon chopped garlic
3 to 4 boiled potatoes
1 table spoon turmeric powder
Salt to taste

Method to make Alu Methi:
  • Heat oil in a non-stick pan. Add red chilies, asafoedita and garlic. Saute for a minute.
  • Add methi leaves, boiled potatoes, turmeric powder and salt. Mix well.
  • Cover and cook on medium flame till cooks and moisture evaporates.
  • Hot and healthy Alu Methi is ready to serve.
  • Serve hot with Indian bread - roti.

So, here it's a homemade recipe for orange basundi. One of my favorite recipes. It contains oranges means a great source of vitamin c, and as we know milk is good for bones. A real source of calcium.
Preparation time - 10 minutes
Cooking time - 25 minutes
Serves - 4 persons

Ingredients to make Orange Basundi:

8 cups full fat milk
2 cup condensed milk - sweet
2 cup orange juice
1 tea spoon cardamom powder- opt.

For garnishing:

fresh orange  - chopped

Method to make Orange Basundi:
  • Heat milk in a non stick pan for 10 minutes. 
  • Add condensed milk to it and again boil for at least 15 minutes.
  • Remove from flame and let it come to room temperature. 
  • When cool place in refrigerator and let it chill. 
  • When chilled add orange juice and cardamom powder.
  • Garnish with oranges.
  • Serve chilled Orange Basundi with Indian bread- roti or puri.
Tips to make Orange Basundi healthier:
  • For those who are diet conscious can use low fat milk and milk powder. The ratio may be 1 cup milk + 1 table spoon milk powder.
  • If there is sugar problem non sweetened condensed  milk and artificial sweetener can be used.
