How to make Schezwan paneer

Recipe by Naiya Sheth : I have tried it at many different restaurants, but prefer to make my own meals from scratch. It is simple to make and something to eat. Below is my recipe for Schezwan paneer. Homemade paneer is a special treat. It is well worth the effort to make homemade paneer. Use the paneer recipes to get started making your own fresh paneer. Schezwan sauce is very tempting and spicy sauce. Normally we are making Schezwan noodles and Schezwan rice. Here it�s a homemade recipe for Schezwan paneer. It means a testy dish with the richness of homemade paneer.

Preparation time � 20 minutes
Cooking time � 10 minutes
Serves � 2 � 3 persons

Ingredients to make Schezwan Paneer:

2 table spoon oil
� tea spoon crushed ginger
2 table spoon onion sliced
200 grams paneer
Salt to taste

For red paste:

2 table spoon oil
2 table spoon garlic pastes
1 tea spoon cumin seeds
1 tea spoon vinegar
10 dry red chili

For Schezwan sauce:

Salt to taste
2 table spoon ketch up
2 table spoon corn flour slurry
1 tea spoon soy sauce

For garnishing:

Green part of spring onion � finely chopped

Method to make red paste:

Mix all the ingredients of red paste and grind properly add water if required.

Method to make Schezwan sauce:

  • Heat oil in a pan and fry red paste in it. Cook for 4 to 5 minutes. Add salt, ketch up and corn flour slurry to it. Add some water and let it cook for 2 to 3 minutes.
  • Keep a side.

Method to make Schezwan Paneer:

  • Heat oil in another pan and fry ginger paste to it. Fry onion and then add paneer to it. Cook for 1 to 3 minutes and add Schezwan sauce. Add salt to taste.
  • Garnish with spring onion. Hot and tempting Schezwan Paneer is ready to serve.

Method to make homemade creamy paneer:

  • Heat milk in a pan and let it come to boil. When it boils remove from flame and add whipped curd slowly till paneer is ready.
  • Around � cup curd will go to make paneer from 500 ml. milk.

Preparation time � 30 minutes
Cooking time � 30 minutes
Serves � 4 people

Ingredients to make Shahi Dum Biriyani:

2 table spoon oil
2 table spoon butter
� tea spoon cumin seeds
2 tea spoon green chilly finely chopped
2 onion finely chopped
� cup tomato puree
� capsicum finely chopped
2 boiled potatoes finely chopped
� cup boiled green peas
1 cup basmati rice
Salt to taste
1 tea spoon boiled green peas
� cup carrot par boiled and finely chopped
2 tea spoon cashew nuts � roasted in butter
2 tea spoon raisins soaked
� tea spoon turmeric powder
� cup cheese � cut in small cubes
� cup paneer � cottage cheese � small cubes
1 tea spoon biriyani masalo
1 tea spoon red chili powder



For garnishing:

Finely chopped coriander leaves
Butter
fried paneer pieces
Roasted cashew nuts
Fried onion slice

Ingredients to make Cheese Raita:

1 � cup curd
2 table spoon full cream
2 table spoon cheese spread
Salt to taste
Finely chopped coriander leaves

Method to make Shahi Dum Biriyani:

  1. Soak rice and cook it. When cooked let it cool at room temp.
  2. In other pan heat oil and butter and add cumin seeds. When it crackles add onion and fry till light brown in colour.
  3. Now add tomato puree and let it cook properly.
  4. Add all chopped vegetables and dry spices. Mix well and cook properly.
  5. Add boiled rice, cheese cubes and paneer cubes. Mix well. Cook for 2 minutes.
  6. Put pan on tavi � griddle and add butter on rice. Now make smoking effect with the help of coal and close the lead. Cook on very slow flame for 5 minutes with griddle.
  7. After that remove smoke and garnish with dry fruits, fried onion, paneer and coriander.
  8. Hot and smoky Shahi Dum Biriyani is ready to serve. Serve it with Cheese Raita.

Method to make Cheese Raita:

  1. Mix all the ingredients of raita in a bowl and serve with shahi dum biriyani.
Tips for cheese raita:
  1. You can add grated cucumber, carrot and capsicum to make it more healthy.

How to make Masala Crispies

Learn how to make Masala Crispies. Usually we are use to have fried snacks or cookies at tea time. But here it's a great combination of crispy masala puri without frying. So, tasty snack with low cal. Masala Crispies can be baked or fried also as per your requirement. Even they can be served with desired toppings also.


Preparation time - 10 minutes
Baking time - 15 minutes




Ingredients to make Masala Crispies:


1 cup refined flour
3 table spoon ghee or butter
2 table spoon curd 
Salt to taste
1/2 tea spoon roasted cumin powder (roughly crushed)
1/2tea spoon black pepper powder (roughly crushed)
1/4 tea spoon baking soda
Oil for frying (opt.)


For topping:


Finely chopped onion
Finely chopped tomato
Finely chopped Capsicum 
Finely chopped coriander leaves
Salt
Red chili powder
Black pepper powder


Method to make Masala Crispies:

  • In a big mixing bowl mix all the ingredients of crispies and make dough. If required add one or two spoons cold water.
  • Cover it with wet cloth for 10 minutes. 
  • Make small balls from it and roll small medium thick puries from it. Prick them with fork or knife.
  • In a baking dish spread butter paper and spread  puries over it. 
  • Bake them in preheated oven for 10 to 15 minutes or till light brown at 180` c temp.
  • Remove from oven and let it cool at room temp.
  • Tasty Masala Crispies are ready to serve. 
  • Apply topping as required or serve as it is with tea or coffee.
Tips for Masala Crispies:
  • You can fry this instead of baking.
  • Instead of black pepper powder add chilly flacks and oregano.
  • Kasuri methi aslo tastes very good with tea.
